Nachos, a beloved Tex-Mex favorite, were first created in 1943 in the border town of Piedras Negras, Mexico, just across from Eagle Pass, Texas. The story goes that Ignacio "Nacho" Anaya, chef at the Old Victory Club, improvised the dish when a group of military wives from Fort Duncan arrived after hours. With Limited ingredients on hand, he combined crispy tortilla chips, melted cheese and sliced jalapenos, naming it "Nacho's Special" after one of the women asked him for his name. The simple yet delicious creation quickly gained popularity throughout Texas and the Southwestern U.S., evolving into the loaded nachos we know today. Esmeralda, the proud owner of La Charra in Rusk, is a third-generation native of Piedras Negras. She brings a piece of her heritage to your table with her signature "Piedras Negras Nachos."
